The history of sushi began with Paddy Fields in Asia, where fish was fermented with rice vinegar after which the rice was discarded. The dish is today known as narezushi In the Muromachi period, people began to eat the rice as well as the fish. During the Edo period, vinegar rather than fermented rice began to be used.
In the present day , we usually eat sushi in restaurants but in the past , Japanese people served sushi in stalls so that Japanese shoppers could grab a quick bite on the go at the stalls.

In my opinion , you should definitely try salmon sushi because it a good start if you want to get into sushi.Next you could try unagi (which is eel) and from there , you can venture out to other things like California roll or, if you are feeling brave fugu (Puffer fish) but keep in mind that you could die if the chef is not a professional.
